Papaya And Mixed Greens

A very pretty salad with vibrant summer colours and a fresh dressing.
This salad is sure to liven up your table!

Mixed salad greens
|
4 cups

|
Medium papaya, seeded (reserve 2 tbsp.,30 mL, seeds) and cut into 1/3 inch (1 cm) cubes

Medium tomatoes, quartered, seeded and cut into 1/3 inch (1 cm) cubes

Chopped green onion

1/4 cup

MUSTARD DRESSING
|

|
|
Peanut (or cooking) oil
|
3 tbsp.
|
50 mL
|
|
White wine vinegar
|
2 tbsp.

30 mL
|
|
Dry mustard
|
1 tsp.
|
5 mL
|
|
Liquid honey
|
1 tbsp.
|
15 mL
|
|
Salt
|
1/4 tsp.
|
1 mL
|
|
Pepper, sprinkle
|
|
|
Arrange salad greens on 6 individual salad plates.
|
Top with papaya, tomato and green onion.
|
Mustard Dressing: Combine all 6 ingredients and reserved papaya seeds in jar with tight-fitting lid. Shake well. Makes 1/2 cup (125 mL) dressing. Drizzle over salad green mixture. Serves 6.
