Favourite Mushrooms
A first-course classic!


Fresh large white mushrooms 24  24 
   
Hard margarine (or butter) 3  tbsp. 50  mL
Finely chopped onion 1  cup 250  mL
Lean ground beef 1/4 lb.  113 g 
Finely chopped celery 2  tbsp. 30  mL
   
Ketchup 1/4  cup 60  mL
Fine dry bread crumbs 1/4  cup 60  mL
Garlic powder 1  tsp. 5  mL
Salt 1/2  tsp. 2  mL
Pepper 1/2  tsp. 2  mL
   
Grated Parmesan cheese 1/4  cup 60  mL
Grated part-skim mozzarella cheese 1/2  cup 125  mL


Remove stems from mushrooms. Chop stems finely. Set aside.

Melt margarine in medium frying pan on medium-high. Add onion, ground beef and celery. Scramble-fry until onion is softened and beef is no longer pink.

Add reserved mushroom stems and next 5 ingredients. Stir well. Remove from heat. Divide and stuff filling into mushroom caps. Arrange in single layer on ungreased baking sheet.

Sprinkle with Parmesan cheese and mozzarella cheese. Broil on second rack from top for about 5 minutes until heated through. Serve immediately. Makes 24 stuffed mushrooms.
