White Chocolate Fudge Truffles
Fabulous! Sweet, rich and creamy truffles that are well worth the effort.


Granulated sugar 1 1/2  cup 375  mL
Evaporated milk (not skim) 1/2  cup 125  mL
   
White chocolate chips 1  cup 250  mL
Butter (not margarine), softened 1/3  cup 75  mL
Clear vanilla 2  tsp. 10  mL
Salt, just a pinch    
   
White chocolate melting wafers 1/2  cup 125  mL
Dark (or milk) chocolate melting wafers 1/2  cup 125  mL
Pink chocolate melting wafers 1/2  cup 125  mL


Combine sugar and evaporated milk in 3 quart (3 L) heavy saucepan. Heat and stir on medium for about 4 minutes until mixture comes to a rolling boil that cannot be stirred down. Reduce heat to medium-low to keep a hard boil without boiling over top of pan. Boil hard for 6 minutes, stirring occasionally. Remove from heat.

Combine chocolate chips, butter, vanilla and salt in small bowl. Add all at once to milk mixture. Beat with electric mixer in saucepan for about 8 minutes until tablespoonful will remain on surface rather than sink. Pour into greased 8 x 8 inch (20 x 20 cm) pan. Chill until cold. Drop by 1 1/2 tsp. (7 mL) onto cold waxed paper-lined baking sheet. If fudge becomes too soft to work with, chill until cold. Chill. Roll each portion into a smooth ball. Chill.

Heat melting wafers separately in small glass bowls over simmering water in small saucepan on low, stirring constantly, until smooth and melted. Remove from heat. Dip 1/3 of balls into white chocolate, allowing excess to drip back into bowl. Place on waxed paper-lined baking sheet. Repeat with remaining balls and dark and pink chocolate. Keep well chilled until completely set. Drizzle any remaining melted chocolate decoratively over truffles. Makes 47 truffles.

Tip:To make truffles that are uniform in size, use a miniature ice cream scoop. If the truffles are not going to be dipped for a long period of time (i.e. until next day) cover well or place in an airtight container and chill to prevent drying out.
